Chakchouka: an all-in-one meal

It is an ideal meal for brunch, perfect for serving on the patio with family and friends, or for a quick dinner preparation on a weeknight.

It is a simple and tasty recipe, easy to make with a few ingredients. You will love how quickly you can prepare this all-in-one dish and pop it in the oven to cook in minutes.

Cooking time: 15 to 20 minutes
Yield: 2-4 servings

 

Ingredients (2 servings)

Double the quantities for four servings.

 

Fried potatoes
2 tablespoons (30 mL) olive oil
2 small potatoes

 

Chakchouka
1 ¾ cups (475 ml) L’Heritage baked beans
2 eggs
1 diced seeded tomato
1 chopped green onion
Fresh coriander or parsley

Preparation

 

Fried potatoes

  1. Wash and brush the potatoes. Wipe them off well. Brush them with olive oil. Prick the potatoes with a fork in three or four places on each side to allow the steam to escape.
  2. Place the potatoes on a microwave-safe plate and cook for about 5 to 7 minutes. Cooking will vary depending on the size of the potatoes. Cook for 5 minutes and check if they are well cooked. If not fully cooked, turn them over and continue cooking in one-minute sequences.
  3. Slice the potatoes lengthwise.
  4. In a skillet, heat the oil.
  5. Brown the cooked potatoes on both sides.
  6. Set aside.

 

Chakchouka

  1. In a bowl, combine the baked beans, diced tomato, and chopped green onion.
  2. Pour the mixture into a skillet or baking dish.
  3. Using a spoon, make two small hollows and crack an egg in each.
  4. Add the fried potatoes around the eggs.
  5. Preheat the oven to 375°F (190°C). Place in the oven and bake for 15 to 20 minutes until the eggs are soft or cooked to your liking.
  6. Remove from the oven and garnish with coriander or parsley.
